Ingredients:
Sauté in 2 Tbsp oil for 5 minutes stirring often:
1 medium onion sliced thin
1-2 tsp cumin

Add and sauté for one minute:
2-3 cloves chopped garlic
1 inch piece of fresh ginger grated fine

Add:
1 cup raw lentils (you can mix 2 or 3 different kinds of lentils)
2-3 curry leaves (optional)
1 medium tomato, chopped.
Salt to taste
1/2 to 1 tsp curry powder.

Cover with enough water so it is at least 1 inch above the lentils. Check and stir occasionally to keep lentils moist. They soak up the water, but you do not want the lentils soupy. Simmer for about 30 minutes.

Stir in:
1/2 - 1 cup of sour cream
2 sliced hard boiled eggs

Fold in gently. Serve with rice. Makes 4 servings.
